"I never met one I didn't like," said Rosanne Cash, daughter of Johnny, and herself a Grammy-winning musician. "I'd happily compare every coconut cake in the universe from now until death in hopes of finding the perfect one...if I didn't already know the three best recipes in the world."
The first recipe comes from her grandmother, Carrie Cash, who took the old-fashioned approach with shortening, a middle layer of pudding "and a ton of sugar." The second is the creation of Ms. Cash's daughter, Carrie Crowell, whose cake is not as "Southern" in style as Grandma Carrie's, but, according to Ms. Cash, is "rich and light and also really sweet, in the best way." The third is the work of Kristen deLauer, Ms. Cash's good friend, who puts fresh flowers on hers, "something Grandma Carrie would not have understood at all, but is so lovely," Ms. Cash noted.
Asked to choose one cake as her favorite, Ms. Cash opted for her daughter's. Ms. Crowell, 23, teaches cooking classes to grammar-school students and has launched her own online cooking program, "Big City Grits." In January, she'll appear on Bobby Deen's new food show, where she'll help the host turn out healthy desserts (coconut cake is not one of them).
